Jane Duddle
Head of Product Safety at Waitrose

Jane_Duddle An experienced product safety specialist with over 25 years’ experience - the last 20 having worked at Waitrose within the Technical department.

My background in microbiology has covered working in and managing laboratories as well as handling microbiological challenges at suppliers (large & small), developing new products using new ingredients and or processes, working with celebrity chefs, developing procedures for our branches, working with marketing on events & recipe publication and developing risk assessment modules through HACCP. I have also worked on a number of research projects (government & non-government funded) and am a member of various committees.

The Waitrose partnership also works very closely with small producers and as technical lead I ensure the safety & legality of these products. To aid this I am chair of the SALSA technical advisory committee. We also worked very closely with all the large beer pub chains & SALSA to develop a standard specifically for this commodity to increase this sectors understanding of food science and legal requirements - this was launched as SALSA plus beer last year.
